Illustrator CS3 automatically generating rich blacks?

Default Illustrator CS3 automatically generating rich blacks?

I'm a late convert from Freehand (being dragged kicking and screaming, I am). In Illustrator prefs, I've selected "display all blacks accurately" and "output all blacks accurately." Currently I'm setting up some fairly extensive logo files for a client's in-house art department, and am giving them separate files for coated and uncoated paper on both sheetfed and web offset presses. Testing the files, I'm printing separations to PDF. In both of the Illustrator files set up for coated paper, the blacks are separating as rich black. In both files set up for uncoated paper, the blacks are printing true to the art: 100%K. Is this just me, or is it universal? I'm especially confused because of the preference setting.
